Instructions. Sieve the cornflour, nutmeg, cocoa powder, cinnamon and sugar into a bowl. Add about 2 tblsps of the milk to the bowl and mix using a whisk until you have a smooth paste. Heat the remaining milk in a saucepan until just beginning to boil. Method. 1. Blend cornflour with 1 tablespoon of the milk in a small bowl until smooth. 2. Bring remaining milk to boil in small pan; remove from heat. Add sugar, vanilla and cornflour mixture, stirring over heat until mixture boils and thickens. 3. Pour blancmange into small bowl, cover; refrigerate several hours or until set. Soak the gelatin in 50 ml cold almond milk. Heat the remaining almond milk with sugar and vanilla sugar in a saucepan, until all the sugar has dissolved. Remove the saucepan from the heat and stir in the cold almond milk with gelatine. Add finely grated orange zest, but save some for later. Whip the double cream slowly until it starts to firm 1. 2. Mix the cornstarch with 100 ml / 3 fl oz of cold milk to make a slurry. Gently heat the remaining milk in a large saucepan on low heat. Just before it boils, add in the vanilla extract, sugar and the cornstarch slurry. 3. 4. Keep the heat on low and stir continuously until the milk starts to thicken. The name is extremely interesting. Blanc Mange or Blancmange is said to be a European dessert made with milk and/or cream and thickened with rice flour, corn flour, gelatin or a type of moss.
