Make sure all of your ingredients for this recipe are at room temperature before starting. This will help bind everything together easier. Preheat your oven to 340°F / 170°C. Add 200g (1 1/3 cup) of gluten free 1-to-1 flour, 100g (7 tbsp) unsalted plant based butter and a pinch of salt to a mixing bowl. Preheat oven to 180c/350f. Firstly make the cherry chia jam- add all the ingredients to a saucepan over a low heat, stirring and mashing the cherries. Leave to cool for five minutes to thicken up. Then make the base by mixing all ingredients to together in a bowl, press the mixture into lightly greased cake tin. Carefully fold through the jam into the cheesecake mixture only a couple of times so its swirled, and not completely mixed through. Spread the mixture onto the biscuit base and spread evenly. Leave to set in the fridge, covered, for 5-6 hours, or preferably over night. Loosen some more jam and drizzle it over the cheesecake. Pre-heat the oven to 180'C / Fan 160'C / Gas 4. Remove the pastry from the fridge. Flatten the ball of pastry between your hands a little and then place between two sheets of clingfilm. Roll to around 5mm thick. Using a pastry cutter, cut 12 circles from the pastry and place them into a 12-hole muffin tin. Step 3: Tip into an 8 x 12in tin, and press down to cover the base. Cook for 20 minutes. Leave to cool. Step 4: Spread the base with the cherry jam. Step 5: Whisk the eggs and egg yolk together in a large bowl, then add the sugar, ground almonds and vanilla and mix well. Step 6: Beat butter briefly to ensure a spreadable consistency, add sugar and beat until pale yellow, light, fluffy and airy. Add egg and flour and beat on low until incorporated. Add almond extract and then beat on a fast speed for about 10 seconds until airy.
