Preparing the Gutti Vankaya Curry. Stuff each brinjal with the ground masala. Keep the leftover masala aside. Heat oil in a pan. Add mustard seeds, cumin seeds, turmeric and allow it to sputter. Then add curry leaves, hing and give a mix. Then place the stuffed brinjals in the pan. Spread the leftover masala on the top. Instructions. . Heat 1 tsp of oil in a pan and add in all the roasting spices. Fry this in a very low flame until everything turns into golden and smells good. Cool this and ground into a powder. . Now heat oil in a kadai. Add in mustard seeds and allow them to pop.. . in a large kadai heat 3 tbsp oil and splutter 1 tsp mustard, 1 tsp cumin, 1 chilli and few curry leaves. saute ½ onion until it changes colour slightly. now add ¼ tsp turmeric and ½ tsp chilli powder. saute on low flame. add in stuffed brinjal and saute gently. cover and cook for 2-4 minutes stirring occasionally. Open the lid in-between to stir and flip the sides. Make sure all the sides of the brinjals get evenly roasted effect. Keep in mind that the masala stuffed brinjals may take a little more time to get roasted. Don't get tempted to add water. Roasting in the oil gives the desired taste to the gutti vankaya gravy. The gutti vankaya dry recipe involves three main steps-. 1. Prepare the stuffing spice mix. 2. Prep and stuff the brinjals with the spice mix. 3. Cook the stuffed brinjals. There are many variations to preparing the filling with a few variations in ingredients and proportions. Step 10: Open the lid, mix and cook in medium flame. If there is no water left and if brinjal is cooked. Turn in to low flame for a second. Taste and add salt if required. Step 11: Sprinkle and mix 4 tbsp grated coconut on it.
