Heat up 2 tbs of olive oil in a large skillet over medium heat. Add the sliced onions and cook for 5-7 minutes. Then remove the onions from the skillet. Add the sofrito to the skillet and cook for 1 minute. Then add the tomato sauce, water, bay leaves and olives. Now add the meat and the onions to the skillet. In a large glass bowl, pour marinade over steaks and refrigerate for at least 1 hour. Drain steaks well and pat dry, discarding the marinade. Dip the steaks in the cracker meal, then the beaten eggs, then the cracker meal again, pressing the steak into meal until well coated. In a heavy skillet, heat 2 inches of oil over medium-high heat to 375º. Cover the bottom of a large, deep skillet with about a ¼ of an inch of oil. Heat the oil over medium-high. When the oil is hot, but not smoking, add 1 or 2 pieces of pork (depending on the size). Do not overcrowd the pan. Fry the pork for 2-3 minutes per side, turn and repeat until they're golden brown. To bread the steaks, first coat both sides lightly in flour, dip in egg and then in bread crumbs. Repeat with each steak. In a large frying pan over medium heat, warm 1/4-inch oil until it shimmers. Working in batches, add steaks in a single layer. Fry until dark golden and cooked through, about 3-5 minutes per side. Put enough vegetable oil in a skillet to rise 1/4-inch up the sides of the pan and turn on the heat to medium low. Beat eggs in a shallow bowl, spread cracker meal in plate, dredge steak in eggs and then in cracker meal until completely coated on both sides. Fry in skillet until steak is golden brown and well done. Stir and cover steaks well with marinade on all sides. Marinate for at least 1 hour or overnight. In a skillet over medium heat, add the cube steak with the marinade. Cover the pan and cook for 10 minutes. Lower heat and cook for 40 minutes. Flip steaks over. Add onions and the tomato sauce.
