Basically, daing, tinapa, tuyo, or buwad are all methods of preparing and preserving fish. In its most basic sense, daing, tuyo, and buwad are all the same thing. Dried, preserved fish. Daing and tuyo are the terms that are usually used in Luzon, while buwad is most commonly used in Visayas and Mindanao. Split the fish open and remove the entrails. Wash in running water and pat dry using a paper towel. In a wide basin, combine vinegar, black pepper, garlic, chili flakes, salt and sugar. Stir well to combine. One effective way to cook tuyo without exposing the smell is to bake it- sounds weird but it works for me.
